I recently upgraded my plan and got a sleek blue Katana LX phone. All the specs I've read say that it has the voice-activated dialing feature but I cannot find out how to work it. Any help?

Did you read the owners manual that comes with it. It explains this in section 2H. Its available online. You just press and hold the talk button until the phone says "say a command" or something like that. Then you can say "Call Charlie" and it will dial by looking up "Charlie" in your contact list.
