With GSM phones (AT&T/T-mobile) you can unlock the phone and use it on other GSM networks (like many did with the iPhone to use it on T-mobile). On CDMA (Verizon/Sprint) it's basically useless since the carriers won't activate outside phones.
It may allow you to make some settings changes, but not sure what those would be, or what benefit you would gain, if any.

First.. what do you mean by lock code? your phone lock security code? or your phone msl code?
your security code is to lock ur phone so no one else uses the phone... or incase it gets lost or stolen you can set it up to lock at power on that its locks the phone usuage. Also it helps u lock the single command to erase phonobook, pictures, downloads etc.
your msl code is the handset lock. it lets u go into the phone software and update settings and program your phone. this is a little more advanced and you can tweak the settings on ur handset. although even if u update/swap your phone# inside the software it will not update/swap the actual phone# until an esn swap is done at the sprint side server.
for gsm phones. the phones are locked to work on a specific carrier. unlocking a phone (for gsm) means that you are unlocking and abling it to work on other gsm carriers. although this may hinder in the browser settings and other 1 touch dial settings that may have been set by the original carrier which may or maynot work.
hope that answers..
