I can figure out how to BT off my contact list one by one, but is there a way to do the whole list so I can manage it on my computer?

I just don't see the option in the contacts menus.

You can use syncing software. One example is Microsoft Outlook.

Even if your phone only supports one contact transfer per BT command, the syncing software will repetitively execute commands until all contacts in your address book are copied out of the phone.

If you don't use Outlook (I don't), you can use Susteen Data Pilot or Smith MicroSystems Phone Book Manager. You have to check to see if they have updates for your specific phone.

You mention the M610 and this is a Sanyo forum. Are you trying to read the contacts out of a Sanyo phone and into the M610?

Some of the Sanyo phones can have the address book filled with a single BT command. I have an 8400. I was able to do a "Send Category" from my PDA (Palm Tungsten E2).
