I used the search feature and couldn't find what I wanted, so any help is greatly appreciated. If one wanted to start a 2-year contract(brand-new customer), I noticed that on the site it mentions after signing up for a plan, one cannot change plans to those with a lower rate. How would they know, and would they catch you? Has anyone tried switching to cheaper plans afterwards?

They will know because Sprint will charge back their commission to them and they will get a report with your name/number on it letting them know.

They would catch, and they will charge your credit card or send you to collections.
